Our honey is both nutritional and medicinal. An organic compound known as 5-hydroxymethylfurfural (HMF) is formed when honey is heated or when it's stored for long and in metal containers.
It is present in only very small amounts in fresh honeys (NCBI / NIH) . So all our honey variants are stored at low temperatures and under fresh conditions to give you low permissible HMF concentrations.
We test for HMF and ensure that it's well below the maximum allowable limit 40 mg / kg of honey.
